My day always starts better with thirty minutes of cardio. It was during my exercise that the idea to make sweet and sour chicken struck me.  A wholesome Monday night meal to reward hardworking, studious kids.  Long grain white rice on the side, simmered in chicken broth,...the entree studded with pineapple tidbits and green peppers.

This morning I made rice crispie bars, cut up my cantaloupe, and then off to the grocery store.  On sale were a family pack of pork chops which I'll bake smothered in a mushroom gravy and mashed red potatoes, salad on the side.
